Recipe: Blistered Cherry Tomato Toast

We not only bake sourdough, we also use it as much as possible. Bread doesn't have to be only used for toast and jam. It can highlight a meal or even inspire a new one. We don't just want you to be our customer, we want you to enjoy our products and maybe try something new with them! Here is the first of many recipes for you. Let us know what you think.



Ingredients:
  • 0.75 C Full Fat Greek Yogurt

  • 1 Ea. Lemon Zested

  • 1 Tsp Fresh Lemon Juice

  • 0.50 Tsp Salt

  • 2 Tbl Extra Virgin Olive Oil

  • 2 Slices Your Favorite Burread

  • 4 Cloves Garlic - Chopped

  • 1 Lb. Cherry Tomatoes

* Parsley and Spiced Pumpkin Seeds as Garnish




Method:

  1. Mix greek yogurt, lemon zest, lemon juice, and salt in a bowl and set aside.

  2. Heat 1 Tbl extra virgin olive oil in a skillet and toast bread on both sides until lightly browned. Remove from pan.

  3. Heat remaining 1 Tbl extra virgin olive oil in the same skillet and cook garlic for 30 seconds or until fragrant. Be careful not to burn the garlic. Once the garlic is fragrant, add cherry tomatoes and cook until blistered, about 3 minutes. Then gently smash the tomatoes to release some of their juice. Season with salt.

  4. Spread the greek yogurt on your toasted sourdough and spoon the tomato mixture on top. Sprinkle parsley and spiced pumpkin seeds on the tomatoes.

  5. Enjoy!
